Creamy Kale & Cashew Pesto

Shopping List:

2 Courgettes

80g of Kale ( bit less than half bag)

50g of Cashews

3-4 cloves of garlic ( depends how much you love garlic)

Juice from one LARGE lemon or two small lemons.

Half a spoon of Chilli Paste or chopped two spicy little chillies

Himalayan Salt and Pepper to taste

Vegan Parmesan ( available in health food stores)

A spoon of olive oil .

 

Spiralize your Courgettes

Blend cashews, garlic, lemon juice, chillies and kale in a food processor with a spoon of olive oil. Add salt, pepper to taste.

Steam the courgettes for 3 mins or so.

Mix the courgette with your pesto and if you would like to, add vegan parmesan. You can sprinkle it with pumpkin seeds or berries x Enjoy ! Screen Shot 2016-05-25 at 20.41.02
