Asparagus,
Broccoli
Bag of Kale
Pomergranate
Few mushrooms
Small Aubergine
Quinoa
1 teaspoon tumeric
1 teaspoon curry powder
1 clove garlic
half a cup organic soy sauce
3 spoons of tomato paste
1 Lemon
1 Teaspoon Coconut Oil
Prep time: 10 mins 🙂
Cook Quinoa with half a spoon of coconut oil and half teaspoon of turmeric in a small pot.
Stir fry Kale, Aubergine, Asparagus and Mushroom in with Garlic, Soy Sauce and tomato paste. Add boiled quinoa.
Season with lemon juice and sprinkle with pomegranate. Enjoy! 🙂
