Zucchini Spirals with Hot Chickpea Curry and Cashews

Keep it simple and light. Cashews and Chickpeas will add protein to this DELICIOUS and clever meal. Low fat and no starchy carbs so simply an ideal dinner for Sunday night when you want to recover from your weekend madness.

Time of Preparation: 30 min max

Ingredients for 3 people:

2-3 Courgettes

2 Bell Peppers

12 Mushroom

1 Aubergine

1 Clove of Garlic

Broccoli

2cm piece of ginger root

1 lemon

Tomato Paste and a can of Chickpeas.

Spices: 2-3 teaspoons of each: coriander powder, cardamom, hot curry powder, paprika, smoked paprika, turmeric, cayenne pepper.

Spiralize the raw courgette using a spiralizer ( I use this one ) throw the chickpeas, tomato paste and spices into a pot with your chopped vegetables. Cook the vegetables with spices and tomato paste until soft.

Steam the courgette spaghetti separately.

Once your vegetable curry is cooked, mix it up with the steamed courgette, add cashews and squeeze some lemon juice to taste.
