Pearl Barley Risotto with Leek & Cashew Creamy Sauce

This is one of my favourites.

Ingredients:

3 cups pearl barley

Half of a leek

1 red onion

2 small potatoes

1 tea spoon curry powder

1 Lemon ( squeeze the juice)

1 glass of unsweetened almond milk

100 gram cashews

1 carrot

Cook Your Barley Until Soft and Nice ๐Ÿ™‚

Cook your Veggies ๐Ÿ™‚

Add Almond Milk to your Veggies and Cashews. Add Curry Powder and Lemon Juice. BLEND IT until the sauce has a nice creamy texture. Add Salt and Pepper to Taste.

Mix The Sauce with your Cooked Barley , Sprinkle with Smoked Paprika powder and serve ! ๐Ÿ™‚
